Homemade Oatmeal Sandwich Cookies

There are so many great sweet treats out there that remind me of my childhood.  Cookies and brownies made with our favorite candies like Junior Mints or Rolos.  It's easy enough to go buy those candies, but even better is making them into something yourself.  I love to bake and nothing gives me more satisfaction than coming up with a delicious HOMEMADE version of a favorite childhood snack.  These oatmeal sandwich cookies might possibly be the best thing you will ever put in your mouth.  The cookies alone are rich and chewy.  But try putting the creamy frosting between two of them.  You are in for such a treat.  They make a large batch too.  Perfect for bake sales, birthday parties and sharing.  OR just really enjoying them yourself.

The Homemade Oatmeal Sandwich Cookie Line-up
Cream together brown sugar and butter.
Combine the dry ingredients and set aside.
To the creamed mixture, add eggs and vanilla.
Add flour mixture a little at a time.
Stir in oats.
Bake approximately 8-11 minutes.
Let cool completely before filling.
Combine powdered sugar, vanilla and shortening.
Fold in beaten eggs whites to creamed mixture.
Spread one cookie generously with frosting.
Top with another cookie.
Enjoy the greatest snack you've had
since you were a kid!

Homemade Oatmeal Sandwich Cookies

4 1/2 cups brown sugar
2 1/2 cups unsalted butter
6 eggs
6 cups quick oats
5 cups flour
2 1/4 teaspoons baking soda
1 1/2 teaspoons salt
3 teaspoons cinnamon
3 teaspoons vanilla

Filling

4 cups powdered sugar
2 teaspoons vanilla
1 1/2 cups Crisco shortening
4 egg whites

Preheat oven to 350 degrees F.  Cream together butter and brown sugar.  Add eggs and vanilla.  In a separate bowl combine flour, baking soda, salt and cinnamon.  Gradually add to creamed mixture.  Stir in oats.  Drop by rounded teaspoonfuls onto lightly greased baking sheet.  Bake for 8-11 minutes.  Let cool completely before filling.

To make filling combine powdered sugar, vanilla and shortening until creamy.  Fold in 4 beaten egg whites (that have been beaten until stiff peaks.)  Spread filling between two cookies to create a sandwich.  Wrap each cookie individually in plastic wrap.

Prep Time:  Approximately 20 minutes     Cook Time:  Approximately 11 minutes

    I went ahead and made the recipe with the raw whites. We didn't have a problem with them, and as it made a large batch I shared them with quite a few folks who didn't seem to have any problems (as far as getting sick or anything like that.) If you're a little leary of using the egg whites, I know they make a powdered egg white substitute (Just Whites is a brand I've seen before) I also think you could probably leave them out all together or even make a filling that is more of a buttercream or cream cheese type frosting. I have a recipe on here for Crimson and Cream Whoopie Pies that have a marshmallow cream style filling and the cream cheese frosting on my Mom's Carrot Cake is also very good. I think either one of those would be tasty inside the oatmeal sandwiches as well. If you try a different filling, please let me know, I'd love to hear how it turned out!
