Cilantro Lime Chicken

As I've said before I love the combination of cilantro and lime.  It's so zesty in salsa and Cilantro Lime Rice is a great side dish for any meal.  When I ran across this recipe at Sally's Baking Addition, I knew it would quickly become a favorite in our dinner rotation.  I love meals that can be prepared in one dish and I'm always on the look out for new preparations for chicken breasts.  Mr. Devilish Dish loved the sauce so much, that when I make this again I'm going to double it.  I served it with Cilantro Lime Rice and black beans.  I think the next time I make this I might even double everything and use the leftovers to make some healthy, zesty rice bowls for lunch.  The chicken is so moist and flavorful it's a wonderful weeknight meal.  Thanks Sally!



Cilantro Lime Chicken
(recipe inspired by Sally's Baking Addiction)

4 boneless, skinless chicken breasts trimmed and pounded to an even thickness
Kosher salt and fresh cracked pepper to taste
1 tablespoon olive oil
1 cup chicken stock
1 tablespoon freshly squeezed lime juice
1/4 cup finely chopped white onion
1 tablespoon chopped cilantro
1/2 teaspoon red pepper flakes
3 tablespoons heavy whipping cream
2 tablespoons unsalted butter, cut into cubes

Preheat oven to 375 degrees F.  In an oven proof skillet, heat olive oil over medium high heat.  Season the chicken breasts generously with salt and pepper.  Add the chicken breasts and cook approximately 6 minutes per side (I used some fairly large chicken breasts.) The chicken doesn't need to be cooked all the way through, just nicely golden browned on the outside.  Remove the chicken to a platter, cover with foil and set aside.  To the skillet add chicken stock, lime juice, onion, cilantro and red pepper flakes.  Cook over medium heat, gently scraping up the browned bits from the bottom of the skillet as you stir.  Reduce sauce to about half of the original amount.  (Approximately 10 minutes.)  Add the cream and butter.  Stir until butter has melted and then return chicken to the skillet and place in oven until chicken has cooked through.  (Approximately 5-10 minutes.)  Serve chicken with sauce spooned over top.  (I'm doubling the sauce next time, it was soooo good!)
