Attention Peanut Butter Lovers: Peanut Butter Coffee Cake!

Peanut butter is my favorite.  Reeses, peanut butter cookies, peanut butter and jelly, peanut butter and peanut butter.  You get the idea.  So what could be better in the morning than a slice of peanut butter coffee cake?  It's not too sweet so it's perfect in the morning along side a cup of coffee.  Or in my case a Diet Coke!

The Peanut Butter Coffee Cake Party
Combine flour, brown sugar, peanut butter
and melted butter.

Set crumb mixture aside,
this is your topping for later.

Cream peanut butter and shortening
together in mixing bowl.

Add brown sugar to peanut butter
and shortening.

Add eggs, one at a time and
beat until light and fluffy.
Combine dry ingredients.
Add flour to creamed mixture.
Add milk to creamed mixture.
Spread batter evenly in greased pan.
Top batter with crumb mixture before baking.
Cool in pan befor serving.
Pour yourself a cup of coffee,
or a big Diet Coke and it's a good morning!

Peanut Butter Coffee Cake
1 1/2 cups packed brown sugar, divided
2 1/2 cups all-purpose flour, divided
3/4 cup creamy peanut butter, divided
2 tablespoons unsalted butter, melted
1/4 shortening
2 eggs
2 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon baking soda
1 cup milk

Preheat oven to 375 degrees F.  Mix 1/2 cup brown sugar, 1/2 cup flour, 1/4 cup peanut butter and the melted butter until crumbly and set aside.

Cream 1/2 cup peanut butter and shortening together well.  Beat in 1 cup of brown sugar.  Add eggs, one at a time, beating until fluffy.

Combine 2 cups flour, baking powder, salt and baking soda.  Alternately add dry mixture and milk to creamed mixture; beginning and ending with dry mixture.

Spread batter evenly into greased 13x9x2-inch baking pan.  Top with reserved crumb mixture.  Bake for 30-35 minutes or until cake tester comes out clean.

Prep Time:  Approximately 25 minutes  Cook Time 30-35 minutes
