Taco Soup! Taco Soup!

My hubby actually did the "Taco Soup" dance when he heard what we were having for dinner.  I got text messages throughout the day that read, "Taco Soup!  Taco Soup!"  So here we go...
   Everyone that got invited to the party...
Nothing fancy tonight!


First of all, you need to chop your onion. 
Or if you're lucky like me,
you have a hubby with great knife skills! 

Nothing fancy, just a regular chop will do!

To your soup pot, or Dutch oven,
add your ground beef and chopped onion.

Now you want to season with salt. 
I prefer Kosher salt unless I am baking. 

Don't forget the pepper. 
I prefer to grind it fresh as I go...

Cook the beef and onion over
medium-high heat until the meat
is browned and the onion is tender.
Drain well.
Return the beef and onion mixture
to the pot and add the next 7 ingredients.
So Colorful!
I think I forgot to tell you water
was invited to the party. 
But you'll see that in the recipe below.
Stir this up well and bring to a boil.
Reduce to a simmer for 15 minutes...

Spoon soup into bowls and
top with your favorite toppings. 
We like cheese, Fritos and sour cream. 
Try lettuce and tomato too!



Taco Soup
1 pound ground beef
1 large onion, chopped
3 (15 ¼ ounce) cans Mexican style chili beans, undrained
1 package frozen whole kernel corn, thawed
1 (15-ounce) can tomato sauce
1 (14 ½ ounce) can whole tomatoes, undrained and chopped
1 (4 ½ ounce) can chopped green chiles
1 (1 ¼ ounce) package taco seasoning mix
1 (1-ounce) package Ranch-style salad dressing mix
1 ½ cups water
Toppings:  Fritos, shredded lettuce, chopped tomato, sour cream, shredded cheese

Cook beef and onion in a Dutch oven over medium-high heat until meat is browned and onion is tender, stirring until meat crumbles.  Drain.  Stir beans and next 7 ingredients into beef mixture, and bring to a boil.  Reduce heat and simmer uncovered 15 minutes, stirring occasionally.  Spoon soup into bowls and top with desired toppings.
 Prep Time:  Approximately 10 minutes  Cook Time:  Approximately 25 minutes
