If You Like French Onion Soup, Try: Sweet Onion and Beef Soup! Perfect For A Snow Day...

French Onion Soup is so delicious, and darn easy to make.  You don't have to wait for dinner out at a restaurant to have it.  This version uses sweet onions, such as Vidalias, Texas Sweets or Sweet Hawaiian, and beef.  It's hearty and satisfying and so good with the crusty bread and melted cheese on top.  Enjoy!
The Sweet Onion and Beef Soup Line-Up
Coat beef cubes with flour.

Brown beef in hot oil in Dutch oven. 
Remove from pan.
Melt butter in Dutch oven.
Add onions and saute until tender.
Sprinkle with flour. 
Season with salt and pepper. 
Add beef, broth and red wine.
Bring to a boil. 
Reduce heat and simmer 35-40 minutes.

Serve topped with toasted bread and melted cheese.


Sweet Onion and Beef Soup
1 pound top sirloin, cut into 3/4-inch cubes
3 tablespoons all-purpose flour, separated
2 tablespoons vegetable oil
1 stick unsalted butter
6 large sweet onions, sliced thin
8 cups beef broth
1/2 cup red wine
salt and pepper to taste
French bread, sliced and toasted
Swiss cheese slices

Place beef cubes in a large zip top bag with 2 tablespoons of flour.  Shake until coated.  Brown beef in hot oil in a Dutch oven.  Remove beef from pan.  Add butter to pan and melt.  Saute onions in butter until tender.  Sprinkle with remaining tablespoon of flour and stir.  Add beef, broth, red wine and season with salt and pepper.  Bring to a boil, then reduce heat and simmer 35-40 minutes.  Ladle soup into oven proof bowls and top with a slice of toasted bread and a slice of swiss cheese.  Place bowls on baking sheet and broil in oven until cheese is melted.
