Roasted Garlic Dip with Bacon

If you're a garlic lover, you will love this dip.  If you're a bacon lover, you will love this dip.  If you're neither, you will still love this dip!  It combines the mellow flavor of roasted garlic, with the crispness of bacon in a tasty, creamy dip.  It's great with your favorite chips, or try a little dab on top of a baked potato.  Yum!

Place sour cream in a bowl.
Add mayo
You must get one of these

Add dried chives
Squeeze roasted garlic from bulbs into a bowl.
Mash well with a fork.
Add to sour cream mixture.
Add chopped bacon to mixture.
Taste and season with salt and pepper. 
In this case I used white pepper,
but feel free to use either.
Cover and refrigerate at least two hours.
Serve with your favorite chips for dipping!

Roasted Garlic Dip with Bacon

2 bulbs of garlic, roasted (How To)
6-8 slices bacon, fried and crumbled
1 1/2 cups sour cream
1/2 cup mayonnaise
1 1/2 tablespoons dried chives
1/2 teaspoon white pepper OR crushed black pepper to taste
salt to taste

In a bowl, combine sour cream, mayonnaise and chives.  Squeeze roasted garlic from bulbs into a small bowl and mash with a fork.  Add to sour cream mixture.  Add bacon to sour cream mixture.  Combine everything well.  Taste and season with salt and pepper.  Make ahead at least two hours so flavors have time to meld.  (NOTE:  Can be made a day ahead, but bacon will lose some of its crispness overnight.)

White pepper and black pepper come from the same plant.  The color has to do with the amount of time the berries are left on the plant to ripen.  Black pepper has a slightly "hotter" flavor than white.  I like to use white in dips and sauces because of the lighter color.
