By Popular Demand: No-Peek Casserole

I love everything about this recipe.  Except the name.  It said "No-Peek" and I spent all afternoon forcing myself not to peek.  Other than that hard and fast rule, this recipe is super simple.  It's great for a busy day.  You don't even have to brown the meat.  Which happens to be stew meat, and because it cooks low and slow, it comes out very tender.  The best part is everything goes in one pot, which make the dishwasher girl (yours truly) very happy.  I served it over mashed potatoes, but I think it would be equally delicious over rice or egg noodles.  Enjoy, and try not to peek!
The No-Peek Casserole Party!
In an oven-safe casserole dish or Dutch oven,
combine stew meat and soup.
Add ginger ale. 
(I don't know why, just go with it, it's good!)
Add dry onion soup mix.
Add drained mushrooms.
Stir it all up.  Cover and cook for 2.5 hours. 
No Peeking!
In 2.5 hours you have a delicious dinner,
and one pot to clean up.
File this one under "Fix it and Fugget About It."
Serve over mashed potatoes,
rice or noodles.  Yum!

No-Peek Casserole

2 pounds beef stew meat
1 can cream of mushroom soup
1/2 cup ginger ale
1 envelope onion soup mix
1 jar sliced mushrooms, drained

Preheat oven to 300 degrees F.  Combine all ingredients in a Dutch oven or casserole dish.  Do not brown meat or dilute soup with water.  Mix well and cover.  Place in oven and bake 2 1/2 hours.  Do not peek!  Serve over potatoes, rice or noodles.

Prep Time:  Approximately 5 minutes     Cook Time:  Approximately 2.5 hours
