Authentic Indian Fry Bread--Makes Great Indian Tacos

You really should try these if you don't want me to cry...
The best thing about the State Fair has to be the Indian Tacos.  And the Cinnamon Roll stand.  And Candy Apples.  Oh yeah, and Cotton Candy.  But back to the Indian Tacos.  I'm not sure if they serve these at other fairs and festivals around the country or if they are native to Oklahoma only, but count me in.  The golden, puffy fry bread makes a great base for a variety of toppings.  Or it can be sprinkled with cinnamon and sugar and dipped in honey.  Try serving it alongside a bowl of chili or stew.  I've had this recipe since I was a kid.  I have no idea where I got it.  I probably asked an old Indian lady how to make it.  Indian Tacos were one of the only 3 things I knew how to make for my husband when we first married.  We rotated between Chicken Marsala, Chicken Spaghetti and Indian Tacos.  I definitely know how to cook many more things now, but this still remains one of our favorites.  Authentic Indian Fry Bread is so delicious, trust me.  I know, I am a card-carrying Indian and I approve of this recipe!
Only 4 ingredients to delicious,
Authentic Indian Fry Bread.
Combine flour, baking powder,
salt and buttermilk.
Stir until it comes together as a dough. 
(May need to cover
surface and hands with flour.)
Divide into sections and
roll out into large, thin pieces.
Fry in shortening until golden...
And puffy.
Flip over and fry until other side is golden.
Top with beans, lettuce, tomato,
onion, cheese and hot sauce. 
Pretend you're at the Oklahoma State Fair.




Authentic Indian Fry Bread

2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1 cup buttermilk
shortening for frying

In a skillet over medium high heat, melt shortening for frying.  Meanwhile combine flour, baking powder, salt and buttermilk.  Divide into 4 even sized pieces and flatten and roll out slightly.  This will make 4 large pieces for Indian Taco bases.  Can also be made into smaller pieces to serve with cinnamon/sugar and honey.  When oil has reached 350 degrees F, place dough in skillet and fry until golden.  Flip over and fry until other side is golden brown.  Drain on paper towels.

Prep Time:  Approximately 10 minutes     Cook Time:  Approximately 6 minutes

For Indian Tacos, I like to top the fried dough pieces with:

Warmed Ranch-Style Beans (they're the best around!)
lettuce
tomato
onion
shredded cheese
hot sauce
