GIANT Chocolate Chip Cookies

Recently, Little Devil needed an idea for a fundraiser.  One of the clubs she belongs to at high school is raising money to attend a national event.  Obviously we thought of baking something.  Other kids might be washing cars or mowing lawns.  Little Devil headed straight for the kitchen.  I had seen the idea of making giant cookies and packaging them in CD envelopes before on the internet.  Since she's a marketing genius, we thought this cute packaging might make a delicious, home baked chocolate chip cookie seem even better.  We found the recipe and adorable packaging idea on the Intimate Weddings blog.  (How cute is that to give away cookies as a wedding favor???)  I've lost count on how many batches of these we have made to date.  They are a really good seller.  And it makes a damn good cookie dough.  Not that I've eaten any or anything.  Let's just say that one batch mysteriously made 17 cookies instead of 18 cookies.

The ingredient line-up
Sift together flour, baking soda and salt.
Set aside.
Cream together melted butter,
brown sugar and white sugar.
Add vanilla.
Add egg and egg yolk.
Beat until light and creamy.
Mix in dry ingredients just until blended.
Stir in chocolate chips by hand with a wooden spoon.
Use a 1/4 cup measuring cup to drop dough onto
lightly greased cookie sheets.
(6 per sheet)
Remove to wire racks to cool.
If you're going to package the
cookies in CD envelopes,
wrap each one well with plastic wrap.
(This helps keep the cookie fresh,
and prevents the envelope
from getting grease spots.)
Make a fun little label using sticker paper
and seal up the envelope.

No wonder she raised so much money!  YUM!

Giant Chocolate Chip Cookies


2 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
3/4 cup unsalted butter, melted
1 cup packed brown sugar
1/2 cup white sugar
1 tablespoon vanilla extract
1 egg
1 egg yolk
2 cups semi-sweet chocolate chips (I did 1 cup semi-sweet and 1 cup milk chocolate)

Preheat oven to 325 degrees F.  Sift flour, baking soda and salt together.  Set aside.  Cream together melted butter, brown sugar and white sugar until well blended.  Beat in vanilla, egg and egg yolk until light and creamy.  Mix in the sifted ingredients just until blended.  Stir in chocolate chips by hand using a wooden spoon.  Drop the cookies using a 1/4 cup measuring cup onto a lightly greased baking sheet.  Cookies should be approximately three inches apart.  (I put six cookies per pan.)  Bake for 21 minutes.  Cool on baking racks.  (I found that leaving the cookies on the cookie sheets for about 7 minutes after removing from the oven worked the best for me.  Then I removed them to wire racks to cool completely.)
