Creamy Corn Dip

Snacking?  Guilty!  We are the biggest snackers at our house.  Sometimes instead of meals, it's just chip and dip.  So unhealthy I know, but who can turn down chip and dip?  AND it's a great time for Mr. DD and I to test drive recipes that we want to use for tailgating.  So Spicy Corn Dip was born and many Fritos were consumed.  And I think we have a new recipe, just in time for kick off...

Creamy Corn Dip & Fritos Scoops:

The Line-Up...
One bowl, so simple.

Creamy Corn Dip
1 (8 ounce) container sour cream
1 cup mayonnaise
2 (11 ounce) cans Mexican-style corn, drained
4 green onions, chopped
3 jalapeno peppers, seeded and minced
1 (4 ounce) can diced green chiles
1 1/4 cups shredded Cheddar cheese

In a medium bowl, combine all ingredients.  Cover and refrigerate at least an hour before serving.  Serve with a big bowl of Fritos Scoops chips and be happy!

Prep Time:  Approximately 10 minutes     Cook Time:  0 needs to chill

  2. Great question! I would probably just increase the amount of sour cream, or use a plain yogurt in place of the mayonnaise. Just as long as you get the creamy consistency you are looking for, either should work fine!
