Chicken Salad Sandwiches for a Crowd


Every once in a while I come by a recipe that quickly becomes an old favorite.  Chicken Salad Sandwiches for a Crowd has proudly been added to my repertoire.  On more than one occasion this past spring, I served these sandwiches and got rave reviews.  We entertain a lot, and when the weather gets warm and baseball and golf season come around, I love go-to recipes that can be made ahead and served with ease.  It's simple enough to prepare for a lunch box, but tasty enough for a very casual meal for guests.  I hope this one becomes part of your repertoire too!

Make Ahead!  So Easy!
Chicken Salad Sandwiches For A Crowd


2 cans shredded chicken, drained well and fluffed with fork
2 cups red grapes, halved
1 cup chopped celery
6 green onions, chopped
1 cup shredded Parmesan Cheese
1/2 cup mayonnaise
1/2 buttermilk
juice from 1/2 lemon
2 teaspoons dried dill
2 teaspoons dried parsley
1/2 teaspoon garlic powder
salt and pepper to taste

Combine mayonnaise, buttermilk, lemon juice, dill, parsley, garlic powder and salt and pepper.  This is your dressing, set aside.  Meanwhile in a large bowl toss together chicken, grapes, celery, green onions and Parmesan.  Pour dressing over chicken mixture and stir until well-combined.  Serve on sandwiches, croissants or a bed of greens.  Can be made up to a day ahead and refrigerated.

NOTE:  I made this using regular sliced wheat sandwich bread and the yield was approximately 16 sandwiches.
