Spicy BBQ Chicken Dip

When I think of BBQ, I usually think of brisket or ribs.  I certainly don't think of dip.  However, you can pretty much mix anything with cream cheese, put more cheese on top, put it in the oven and be guaranteed it will taste good.  My Buffalo Chicken Dip is one of the most viewed recipes on my blog.  This is just a variation on that version, and a very good variation I must say.  If you're not all into spicy like we are, you can certainly use a mild BBQ sauce and cut back on the amount of jalapenos, or leave them out all together.  Or add more!  Serve it hot out of the oven with a big pile of scoop-style tortilla chips and you've definitely got a winner!

Serve warm with tortilla chips.

Spicy BBQ Chicken Dip
2 cups cooked, chopped chicken
8 ounces cream cheese, softened
1 cup HOT BBQ sauce
1/4 cup Ranch dressing
1/4 cup sour cream
3 cups shredded Cheddar cheese
1 teaspoon garlic powder
1 teaspoon onion powder
4 green onions, chopped
3 jalapenos, seeded and minced

Preheat oven to 350 degrees F.  Soften cream cheese.  Add chicken, sour cream, ranch dressing, garlic powder, onion powder, 2 cups Cheddar cheese, 2 chopped green onions and 2 chopped jalapenos.  Mix well.  Spread into a greased 8x8-inch baking dish.  Top with BBQ sauce.  Sprinkle with remaining 1 cup Cheddar cheese, remaining 2 chopped green onions and remaining 1 chopped jalapeno pepper.  Bake 25-30 minutes until hot and bubbly.  Serve with tortilla chips.
