1-2-3 Orange-Pineapple Ice Cream

It's been darned hot around here lately.  I probably shouldn't complain because I think we just hit 100 for the first time this week.  Normally it's at least 97,000 degrees in Oklahoma in July.  It's been darned hot up in Nebraska where my friend Michaela lives too.  She has a food blog also, An Affair From The Heart.  Anyway, to beat the heat, Michaela decided to have a little virtual ice cream social over on her Facebook PageShe invited other food bloggers to share their recipes for staying cool.  Lots of yummy cold drinks, frozen pies and popsicle recipes were passed around.  Since it is socially unacceptable to lick a computer screen, I decided that instead of staring at frozen treats all day on the computer, I would head in the kitchen and whip up a frozen dessert of my own to share with Michaela.  1-2-3 Orange-Pineapple Ice Cream is super simple.  Why 1-2-3???  It only takes three ingredients.  And goes together about that fast.  The only patience you'll need is waiting for it to freeze.  Enjoy, and be sure and visit Michaela's page for some additional ideas for keeping cool!

1-2-3
Orange-Pineapple
ICE CREAM!
Only 1-2-3 ingredients.
Mix condensed milk and pineapple well.
Place in ice cream freezer.
Add orange soda.
Freeze according to manufacturer's instructions.
Enjoy!
(Check out that SWANKY pineapple swizzle stick!)

1-2-3 Orange-Pineapple Ice Cream
2 (14 ounce) cans condensed milk
1 (20 ounce) can crushed pineapple, undrained
64 ounces orange soda (this is just under 2 liters)

In a large bowl, stir condensed milk and pineapple together, mixing well.  Place in container of ice cream maker.  Pour in orange soda.  Stir well.  Freeze according to manufacturer's instructions.  (It will look a little fizzy and frothy when you first pour the soda in, but once it starts to freeze it will become the consistency of sherbet.)

Place in freezer-safe container and freeze until solid if desired.

Prep Time:  Approximately 5 minutes     Cook Time:  0 needs to freeze

NOTE:  My ice cream maker is not large enough to accommodate this recipe.  I simply mixed up the entire amount, poured half into the ice cream freezer.  The other half is in a sealed container, chilling in the refrigerator until freezer bowl insert for my ice cream maker is ready to use again.

  4. Thanks Jodie! Me too! I love simple frozen desserts in the summertime. When I was a kid I remember my grandparents having the ice cream maker with the crank. We would all take turns cranking the handle. It seemed like forever before the ice cream was ready! I'm about to post a Frozen Lemon Crème dessert that doe not require an ice cream maker. I think you'll enjoy it too!
