Cucumber Salad

Cucumber Salad is one of my favorite family side dishes to fix.  It can be made ahead, it's simple to prepare and it's so good in the summertime when the cucumbers are fresh and abundant.  It's a great salad to take to a barbecue, cook out or fish fry because it goes great with anything from grilled burgers to fried fish.  Add this one to your potluck rotation pronto!

Cucumber Salad

6 large cucumbers thinly sliced
1 large white onion, thinly sliced
2 green or red bell peppers, thinly sliced
1 tablespoon kosher salt
1 cup white vinegar
2 cups granulated sugar
1 teaspoon celery seed
1 teaspoon mustard seed

In a large bowl combine cucumbers, onions, peppers and salt.  Set aside.  In a saucepan over medium high heat, combine vinegar, sugar, celery seed and mustard seed.  Bring to a boil and stir until sugar is dissolved and mixture is thickened.  Remove from heat and allow to cool.  Pour over cucumber mixture.  Stir well and store in a covered container in the refrigerator.  Will keep several weeks.
