Cilantro Lime Rice

Cilantro and Lime go together like peanut butter and jelly.  I love the fresh, aromatic combination.  I hate to admit it but I don't eat at Chipotle.  We really don't eat much fast food at all.  We really don't eat out much at all.  But I do hear everyone rave about their cilantro lime rice.  There are a zillion variations on the internet, it's just a matter of finding the right ratio of cilantro and lime to suit your tastes.  Little Devil and her dad love this version best because it's not as heavy on the cilantro as I would like it to be.  Feel free to change that though. You'll have a terrific side dish or the base for a refreshing, healthy rice bowl.
Cilantro Lime Rice
Our new favorite side dish!



Cilantro Lime Rice
2 teaspoons olive oil
1/2 cup finely chopped white onion
2-3 cloves garlic, minced
2 cups uncooked Basmati rice
1 teaspoon Kosher salt
3 cups water
2 tablespoons freshly squeezed lime juice (or more to taste)
1/3 cup chopped cilantro (or more to taste)

In a large pot with a lid, saute the onion in olive oil until it starts to soften and become translucent.  Stir in the garlic, rice and salt.  Continue cooking until the garlic becomes fragrant, but doesn't brown.  Stir in water.  Bring to a boil, then reduce to low.  Cover and simmer until rice has absorbed all of the water, about 15-20 minutes.  Remove from heat and fluff with fork.  Add stir in lime juice and cilantro before serving.

Prep Time: Approximately 10 minutes     Cook Time:  Approximately 25 minutes
