Fancy Whipped Potatoes


As an Oklahoma girl, I can't believe I'm saying this, but I don't like gravy.  I generally avoid mashed potatoes because I don't like gravy and I don't like them by themselves.  I'm the one that asks if we can have fajitas for Thanksgiving instead of turkey and mashed potatoes.  Much to the chagrin of my husband who probably wishes he could swan dive into an Olympic-sized pool full of mashed potatoes and gravy.  I've finally found the perfect compromise.  These potatoes don't need any gravy.  They are whipped and light and full of flavor.  They stand completely on their own.  With Easter right around the corner, they are an elegant side dish to your Easter meal or any Spring dinner party.  The best part is no gravy involved.
An elegant side dish that stands all on its own.
No gravy necessary.
Fancy enough for a holiday,
or guests...
But great for a weeknight dinner too.

Fancy Whipped Potatoes

2 pounds russet potatoes
1 cup chicken stock, heated
6 tablespoons olive oil
3/4 cup grated Parmesan cheese
1/2 teaspoon minced garlic
1/2 cup chopped fresh chives
salt and pepper to taste

Peel potatoes and cut into cubes.  Boil until tender.  Drain and transfer to a large bowl.  Add hot chicken stock and mix with an electric mixer until smooth.  Gradually beat in olive oil, garlic, and cheese.  Stir in chives and season with salt and pepper  (Serves approximately 4)

Prep Time:  Approximately 30 minutes     Cook Time:  Approximately 20 minutes
