Mexican Salmon with Avocado Pepper Salsa

I'm not a huge fish fan.  Little Devil and Mr. DD love it.  So every once in a while I try to throw them a bone and have fish for dinner.  To me it's more palatable when there is some kind of tasty sauce to compliment the fish.  When I saw this recipe at Laylita's Recipes I knew right away it was something that all of us would enjoy.  We prepared it for dinner and loved it.  Shortly after, my nephew came home for a visit.  He lives in Houston so he has access to great seafood and really enjoys it.  I knew he would love this recipe.  This was on a Monday night.  On Friday, his wife texted me to let me know they were enjoying it for the second time that week.  Apparently he loved it so much he ate it three times in five days.  It really is that good.  Whether you are a fish lover like my family or a fish skeptic like me I think this is one recipe you will all enjoy.  Thanks Laylita!

and has quickly turned me into a fish lover.
We enjoyed it with Cilantro Lime Rice.

Mexican Salmon with Avocado Salsa

For the salmon:

2 pounds salmon, cut into 4 pieces
1 tablespoon olive oil
salt and pepper to taste
1 teaspoon coriander
1 teaspoon cumin
1 teaspoon paprika
1 teaspoon onion powder

For the salsa:

1 avocado, sliced
1 small red onion, thinly sliced
3 small mild peppers, thinly sliced (I found a package that had red, orange and yellow peppers.  I don't know the variety.  They were way smaller than bell peppers.  Mild but with more flavor.  Bell peppers will do in a pinch, or try something hotter if you like!)
juice of 2 limes
3 tablespoons olive oil
2 tablespoons chopped cilantro
salt to taste

Rub the salmon fillets with olive oil.  Combine the salt, pepper, coriander, cumin, paprika and onion powder.  Rub this seasoning mix allover the salmon.  Cover and refrigerate at least 30 minutes. 

Combine the avocado, onion, peppers, lime juice, olive oil, cilantro and salt in a small bowl.  Refrigerate until ready to use.

Preheat your outdoor grill (we used a grill pan in a very hot oven.) Grill your salmon to your desired doneness. 

Serve salmon topped with a generous spoonful of the salsa and enjoy.  Serve with Cilantro Lime Rice

Prep Time:  Approximately 20 minutes     Cook Time:  Needs to chill before grilling
