Strawberry Cake Mix Cookies

Little Devil is so fortunate, she has some of the sweetest grandparents around.  So when Valentine's Day rolled around, we wanted to make them a super sweet treat to show how much we love them.  We found the cutest little treat bags in the dollar section at Target.  My late uncle (my dad's twin...basically dad #2) was a coon hunter.  Well he didn't actually "hunt" them.  The sport is more like go out in the woods and let your hound dogs chase them up a tree.  So when I saw these precious bags at Target, they reminded me of him and I knew they would make the perfect Valentine.  Little Devil and I discussed it and decided some kind of cookie would probably be best in this style of treat bag.  She suggested, "How about some kind of cake mix cookie?"  Immediately we both thought strawberry for Valentine's Day  With the addition of white chocolate chips we had the cutest Valentine treat ever:  Strawberry Cake Mix Cookies.

Strawberry Cake Mix Cookies
1 box strawberry cake mix
1 teaspoon baking powder
2 eggs
1/3 cup vegetable oil
1/2 teaspoon vanilla extract
2 cups white chocolate chips

Preheat oven to 350 degrees F.  Line a cookie sheet with parchment paper and set aside.  With a mixer combine the cake mix, baking powder, eggs, oil and vanilla. Stir in white chocolate chips with a spoon.  Use a medium size cookie scoop to drop balls on to the baking sheet.  Bake for approximately 10 minutes.  You want these just done, and not beginning to brown or they will lose their pretty pink color.  Let cool on baking sheet two minutes before removing to cooling rack and allowing to cool completely.
