Leprechaun Shortbread Bites

Shortbread is a traditional sweet biscuit with bewitching flavor.  It's usually just made with three ingredients: flour, sugar and butter.  They come together in a magical combination.  With something so enchanting, it seems only appropriate to adapt it to a St. Patrick's Day treat.  Cutting the shortbread into little "leprechaun-sized" bites and tinting them with green sparkling sugar is the consummate way to lure a leprechaun into your trap!

Leprechaun Shortbread Bites

2 1/2 cups all-purpose flour
6 tablespoons granulated sugar
1 cup unsalted butter, cut into cubes
4 tablespoons green sprinkles or green sparkling sugar

Preheat oven to 325 degrees F.  In a mixing bowl, stir together flour and sugar.  Using a pastry blender, cut butter into mixture until it resembles fine crumbs and begins to cling together.  Stir in sprinkles.  Divide mixture into two balls.  Knead until soft and smooth.  Roll or pat dough onto counter and cut into 1/2-inch cubes.  Place on ungreased cookie sheets and bake approximately 12-14 minutes or until the bottoms just start to brown.  (*NOTE the cookies do not spread out much so you can get a lot of shortbread bites onto one cookie sheet.) Transfer to wire racks covered with parchment paper to cool.  Store in an airtight container or gift to your lucky friends with the provided gift tags.
