Chocolate Cherry Sweetheart Cakes: For Your Valentine!

Yesterday we decided to have some friends over for dinner.  Lasagna Soup was on the menu.  Nothing fancy.  So we threw together a salad, toasted some bread, and grabbed a bottle of wine.  But I still needed a dessert.  I decided on the fly I would make the evening an "impromtu" Valentine's Dinner.  That meant I needed a Sweetheart of a dessert.  Nothing makes me think of Valentine's Day more than chocolate and cherries.  This super simple dessert recipe only has 4 ingredients!  A quick dessert with a fancy result.

Only 4 ingredients!
Place cake mix and pie filling in a mixing bowl.
Beat eggs with a fork.
Add beaten eggs to mixing bowl
and beat with mixer until combined.
Stir in chopped nuts.
Place in greased pan. 
In this case I used this cute
little mini cupcake-style pan. 
The indentation in the top of the cake is the perfect place for whipped cream!
Cool completely and serve with
fresh whipped cream. Or frost with frosting
if you desire.

Our little last-minute Valentine Dinner!


Chocolate Cherry Sweetheart Cakes
1 package Devil's Food cake mix
1 (21 ounce) can cherry pie filling
3 eggs
1/2 cup chopped pecans
whipped cream or frosting of your choice

Preheat oven to 350 degrees F.  Open cake mix, and pie filling and place in the bowl of an electric mixer.  Beat eggs and add to mixing bowl.  Beat until combined.  Stir in nuts.  Bake in a greased 9x13-inch pan for about 35 minutes, or until cake springs back when lightly touched.  Cool completely.  Serve with fresh whipped cream, or frosting if desired.  NOTE:  I used a mini cupcake-style pan and adjusted the baking time according to the directions for baking cupcakes on the cake mix box.

Prep Time:  Approximately 10 minutes     Cook Time:  Approximately 35 minutes
