Cardinals Crunch

I've seen lots of variations of popcorn or snack mixes combined with candy on the internet.  You can't beat the mix of sweet and salty.  A perfect example this time of year is candy corn combined with salted peanuts.  A super simple, but tasty treat.  In my quest to keep my husband fueled up to watch his Cardinals play in the World Series, I decided to take my regular recipe for Crack Corn, and jazz it up.  After all, it's not any ol' baseball game we're talking about.  It's the World Series.  Feel free to throw it whatever you like, whether it's M&Ms, candy corn, or something to match your team's colors.  A home run for sure!

The Batting Order...
Place popped corn on a baking sheet.
Add peanuts.
Mix in candy.
Add mini marshmallows.
Stir in caramel bits.
Melt candy coating and oil together in microwave.
Pour over mixture.
Bake in oven until marshmallows
and caramel bits start to melt.
Cool completely before breaking apart.

Cardinals Crunch

2 packages microwave popcorn (any kind) popped
1 cup dry roasted salted peanuts
1 box Hot Tamales Candy (Or candy of your choice)
1 cup mini marshmallows
1 cup caramel bits
4 squares white almond bark coating
1 tablespoon vegetable oil

Preheat oven to 350 degrees F.  On a large baking sheet, combine popcorn, peanuts, candy, marshmallows, and caramel bits.  Melt almond bark coating and vegetable oil together in microwave.  Pour over popcorn mixture and stir lightly to combine. Place baking sheet in oven and bake 5 minutes at a time, stirring until marshmallows and caramel bits start to melt.  Let mixture cool completely, then break apart.

Prep Time:  Approximately 15 minutes     Cook Time:  Approximately 15 minutes

NOTE:  Don't worry if the marshmallows and caramel bits don't melt all the way.  You really don't want the mixture completely coated and combined.  You want it dry enough to each without getting your hands too sticky!
