Leftover Turkey Noodle Soup
1 package leftover turkey noodle soup mix
8 cups water
2 carrots, peeled and diced
2 stalks celery, diced
1/4 cup chopped onion
3 cups cooked diced turkey
Combine soup mix and water in a large pot. Add the carrots, celery and onion, and bring to a boil. Cover the soup and reduce heat to a simmer. Simmer for 15 minutes. Discard bay leaf. Stir in turkey and simmer an additional 5 minutes. This is a great way to use up leftover turkey!
