Apricot Chicken

Sometimes the oddest combination of ingredients have the best results.  I mean somewhere in history someone decided to dip their chocolate bar in peanut butter.  Or some genius decided to experiment with battering and frying a Twinkie.  (DO NOT knock that one until you've tried it.  I'm sure it is what the food in Heaven will taste like:  Fried Twinkies.)  So somewhere along the line, chicken and apricots were introduced.  And a sweet, sticky chicken concoction was born.  This recipe is so super simple and everyone loves it.  Serve it over rice and you have a definite week-night winner.  Winner Winner Chicken Dinner that is...

The Line-Up
What cook doesn't appreciate a
five-ingredient meal?
Place chicken in baking dish.
Season well with salt and pepper.
(I used Drummettes.  Because I had them
on hand.  I don't even know what a drummette
is.  Do chickens have drummettes?)
Combine dressing with apricot preserves.
Add water...
Add onion soup mix.
Pour over chicken pieces.
Bake 1.5 hours, basting several times
during baking.
Serve over rice.
Take in the rave reviews.
Pretend you have suffered over the
hot stove all day.

Apricot Chicken

1 1/2 pounds chicken (you can use a whole chicken cut up, wings, breasts whatever you like)
1 (8 ounce) bottle French dressing (I used Catalina-it was what I had on hand)
3/4 cup apricot preserves
2/3 cup water
1 envelope onion soup mix

Preheat oven to 350 degrees F.  Place chicken pieces in a 9x13-inch baking pan.  Season well with salt and pepper.  Combine dressing with preserves, water and soup mix.  Pour over chicken, coating well.  Bake uncovered for 1 1/2 hours.  Baste chicken with sauce several times during cooking.  Serve over rice.

Prep Time:  Approximately 5 minutes     Cook Time:  Approximately 1.5 hours

  1. I am so adding this one to my meal line up!! Do you think it would be okay to just use boneless chicken breasts? I am not a fan of Catalina dressing...but I am thinking that's the ticket here? If you made it and said it's good, I know it is!!

  2. I think you can use any kind of chicken you want. I probably would have used boneless chicken breasts except I had to use up some drumsticks. It doesn't taste like Catalina at all. (I'm not a huge fan of it either) You will like it and it is super easy!
