The Line-Up |
Combine beef with salsa and onion. |
Add crushed chips, egg, cumin and salt. |
Mix well. (You may need to add additional crushed chips if it's too moist. You want a moist meatloaf, but not too sticky.) |
Shape into 6 equal-sized portions. Bake for approximately 25 minutes. |
Top with reserved salsa and sprinkle with cheese. |
Tex Mex Mini Meat Loaves
1 1/2 pounds ground beef
1 cup salsa
1/2 cup very finely crushed tortilla chips
1 medium onion, chopped
1 egg, slightly beaten
1 teaspoon ground cumin
1 teaspoon salt
1/2 cup shredded Mexican cheese
Preheat oven to 375 degree F. Combine beef, 3/4 cup of salsa, crushed chips, onion, egg, cumin and salt. Mix well. Shape into 6 mini loaves. Place on a baking sheet that has been lined with foil. Bake for approximately 25 minutes. When ready to serve, spoon remaining salsa over meat loaves and sprinkle with cheese.
