Oven Roasted Cabbage

A while back my mother-in-law was sweet enough to share some yummy Vidalia onions with me.  I knew right away I wanted to make Beefy Grilled Vidalia Onions.  I suspected they might go great alongside some Oven Roasted Cabbage and I was right!  I rounded out the meal with a batch of my Slow-Cooker Candied Kielbasa and it turned out to be the perfect summer supper.

Oven Roasted Cabbage

1 head fresh cabbage
olive oil
garlic cloves, minced (I used one for each side of each cabbage slice)
Kosher salt
fresh cracked pepper

Preheat oven to 375 degrees F.  Spray a jelly roll pan or cookie sheet with non-stick spray and set aside.  Slice cabbage into 1-inch thick slices.  Brush each cabbage slice generously with olive oil and brush on minced garlic.  Sprinkle with salt and pepper.  Repeat on other side.  Roast in oven approximately 25 minutes per side until edges begin to crisp and brown.
