I had a giant jug of apple cider on hand from a recipe earlier in the week. Didn't want it to waste, so I decided to work it into some kind of dessert. With all the savory things I've been making on The Devilish Dish, it's about time we had something sweet!
Apple Cider Pound Cake
3 cups sugar
1 1/2 cups unsalted butter
6 eggs
3 cups all-purpose flour
1/2 teaspoon salt
1/2 teaspoon baking powder
1 teaspoon ground cinnamon
1/2 teaspoon ground allspice
1/2 teaspoon ground nutmeg
1/2 teaspoon ground cloves
1 cup apple cider
1 teaspoon vanilla
Icing
1/2 cup sugar
1/4 cup unsalted butter
1/4 cup buttermilk
1/2 teaspoon vanilla
1/4 teaspoon baking soda
To Coat The Pan1/2 cup sugar
1 tablespoon cinnamon
Preheat oven to 325 degrees F. In the bowl of electric mixer cream the 3 cups of sugar and 1 1/2 cups butter together. Add the eggs, one at a time, beating well after each addition. Combine the dry ingredients in a separate bowl and set aside. Combine the cider and vanilla and set aside. Add the dry ingredients alternately with the cider mixture to the butter-sugar-egg mixture, beginning and ending with the dry ingredients. Combine the remaining 1/2 cup sugar and 1 tablespoon cinnamon and coat a well greased 10-inch tube or Bundt pan with cinnamon-sugar mixture. Pour batter into pan. Bake for 1 hour and 10 minutes or until a cake tester coms out clean. Meanwhile combine icing ingredients in a saucepan. Bring to a boil, then reduce heat and simmer for 10 minutes. Let cake cool in pan on a cooling rack 15 minutes before turning onto platter. While cake is warm, drizzle 1/2 of the icing mixture over the cake. Serve remaining icing mixture over cake slices.Prep Time: Approximately 25 minutes Cook Time: Approximately 1 hour 10 minutes
