EZ Meatball Subs

This is one of those meals I make on nights I don't feel like cooking.  We rarely eat out, so meals like this are our "fast food."  I also like to make these up ahead, and wrap in foil and freeze.  That way the Little Devils have an easy snack or lunch to re-heat in the oven.  Frozen meatballs, pre-made rolls and marinara sauce make this one EZ meal!  It's so easy I'm a little embarrassed to share it.  But I will anyway.  Happy Weekend!

The EZ Meatball Sub Party
Combine meatballs and
marinara sauce in a saucepan.
Cover and heat over medium heat
until thawed and hot.
Hollow out the rolls to create
"boats" for the meatballs.
Place on a baking sheet and get ready to fill.
Add meatballs.
Spoon in remaining sauce.
Cover with sliced Provolone cheese.
Broil until cheese melts
and bread is toasty.

EZ Meatball Subs
1 package frozen meatballs (Italian or Homestyle, your choice)
1 jar marinara sauce (again, your choice)
1 package deli rolls (I usually buy the ones for brats)
1 package sliced Provolone cheese

In a saucepan combine meatballs and marinara sauce.  Cover with a lid and heat about 15 to 20 minutes.  Meanwhile, hollow out the rolls, creating little "boats."  Fill each roll with meatballs.  Add remaining sauce.  Cover with sliced cheese. Heat under low broiler until cheese is melted and rolls are browned. 

Prep Time:  Approximately 20 minutes     Cook Time:  Approximately 5 minutes
NOTE:  Sometimes I use mini meatballs, or sometimes they come in a large package of 64.  They hold up well in the freezer.  Whatever you choose will work fine!    I also make these ahead and freeze for snacks.  When you get to the point that you top the sandwiches with sliced cheese, wrap individually in foil and freeze.  Reheat in a 350 degree F oven for about 15 minutes.
