I know I know. That title is a mouthful. As complicated as it sounds, it's a very simple recipe. My Little Devil, entered this fudge in a contest at a chocolate festival several years ago and won a blue ribbon! Sure fudge can be fudge, but when you coat it in a spicy mixture of cinnamon, sugar, coffee, chile powder and cayenne you get KICKED UP fudge.

In a saucepan combine milk and sugar... |
Add salt. Bring mixture to a low boil for 5 minutes. |
Meanwhile combine brown sugar and cinnamon. |
Add instant coffee granules. |
Add dried chile powder. |
Kick it up with some cayenne pepper. |
Blend together and set aside. |
When the milk mixture has boiled for 5 minutes, remove from heat. |
Stir in marshmallows. |
And chocolate chips. |
Don't forget the vanilla. |
Spread into greased dish and refrigerate until firm. Cut into very small squares, it's rich! |

Murri's Blue Ribbon Kicked Up Cowgirl Fudge
1 1/2 cups semi-sweet chocolate chips
1 1/2 cups mini marshmallows
5 ounces evaporated milk
butter (to grease dish)
1 2/3 cups sugar
1/4 teaspoon salt
1 teaspoon vanilla
Grease an 8x8-inch pan with butter. Combine milk, sugar and salt in a saucepan over low heat. Bring to a gentle boil, for 5 minutes, stirring constantly. Remove from heat. Stir in marshmallows, chocolate chips and vanilla. Spread evenly into greased dish and cool in refrigerator. Cut into very small squares and coat in spice blend.
Prep Time: Approximately 15 minutes Cook Time: 0 needs to chill
Cowgirl Spice Blend
1/4 teaspoon cinnamon
1/4 teaspoon instant coffee granules
1/4 teaspoon chile powder (dried ground chile, not the powder that includes cumin and garlic)
1/8 teaspoon cayenne pepper
3 tablespoons brown sugar
Combine ingredients together. Dip fudge pieces into mixture.
