Hash Brown Casserole: The Ultimate Potato Side Dish!


Ham?  Hash Brown Casserole.  Brisket?  Hash Brown Casserole.  Steak?  Baked Potato.  Just kidding.  Hash Brown Casserole is the ultimate potato side dish for any occasion.  The casserole can be prepared ahead and refrigerated.  Simply pull it out of the fridge, let sit for a few minutes to remove chill, top with corn flake mixture and bake.  It's a great potluck dish.  Who doesn't love creamy, cheesey potatoes??
The Hash Brown Casserole Line-Up
In large bowl combine hash browns with melted butter
Add cream of chicken soup and sour cream
Add shredded cheddar cheese and
season with salt and pepper
Saute cornflakes in butter
Just until butter is absorbed. 
Cornflakes should still be crispy.
Sprinkle cornflake mixture on top of casserole.
Cover and bake.


Hash Brown Casserole


1 (2 pound) package frozen hash brown potatoes, thawed
1/2 cup melted butter
1 (10.75 ounce) can condensed cream of chicken soup
1 (8 ounce) container sour cream
1 onion, chopped
2 cups shredded cheddar cheese
1 teaspoon salt
1/2 teaspoon pepper
2 cups crushed cornflake cereal
1/4 cup melted butter

Preheat oven to 350 degrees F.  In a large bowl, combine hash browns, 1/2 cup melted butter, cream of chicken soup, sour cream, cheddar cheese and salt and pepper.  Place mixture in a greased casserole dish.  In a skillet over medium heat, saute cornflakes in 1/4 cup butter.  Sprinkle mixture over the top of the casserole.  Cover with foil and bake for 40 minutes.

Prep Time:  Approximately 15 minutes     Cook Time:  Approximately 40 minutes
