Pour The Mexican Beer: Slow Cooker Green Chile Brisket Tacos

Brisket isn't just for barbecues!  It's for fiestas too!  Brisket tacos are every bit as delicious as ground beef or chicken tacos, and this version is extra delish.  The best part is it cooks in the slow cooker all day, so all you'll need to do is shred the meat, heat up the tortillas and pour the Mexican beer.

Cut meat into chunks and add chile powder.
Add cumin.
Season well with salt and pepper. 
Rub spices into meat and place in slow cooker.
Add green chiles, onion and garlic.
Add chopped cilantro and lime juice.
Combine ingredients and cook on
low for at least 8 hours.
Remove meat from slow cooker and shred or chop.
Serve with warm flour tortillas
and cold Mexican beer.  Ole!

Slow Cooker Green Chile Brisket Tacos

6 pound brisket, trimmed of fat
1 1/2 tablespoons chile powder (See Note)
1 teaspoon ground cumin
salt and pepper to taste
1 pound whole roasted green chiles, diced
1 yellow onion, chopped
4 cloves garlic, minced
2/3 cup chopped cilantro
juice of one lime

Trim brisket of fat and cut into chunks, approximately 3 inches.  Place meat in bowl and season with chile powder, cumin, salt and pepper.  Rub spices into meat and place in slow cooker.  Add green chiles, onion, garlic, cilantro and lime juice.  Stir well.  Cook in slow cooker on low setting approximately 8 hours, or until meat is tender and falling apart.  Remove meat from slow cooker and shred or chop.  Serve on warmed flour tortillas with sour cream and shredded cheese.

Note:  Chile Powder is not the same as Chili Powder.  Chile Powder is a dried ground chile such as chipotle, ancho, de arbol, etc...Chili Powder is ground chile mixed with cumin, garlic powder and other spices.  It is commonly used as the seasoning when you make chili.  This recipe calls for Chile Powder.  In this case I used a dried chipotle powder so our tacos would have a kick!  You can use whatever Chile Powder you have on hand!

Prep Time:  Approximately 15 minutes     Cook Time:  Approximately 8 hours
